Happy Cinco de Mayo! Today we’re putting our Keto spin on one of our favorites, Chicken Enchilada Bowls! This dish is JAM PACKED with flavor and the star of dinner any time we make it! Pair this with some guac and Splash KETO//OS NAT®, you’ll be in fiesta heaven!
Chicken Enchilada Bowls
Ingredients
- 3 cups of pulled/shredded cooked chicken
- ½ cup salsa verde
- 1, 4 oz. can green chilies (not drained)
- 1 cup water
- 12 oz. bag cauliflower rice, cooked
Seasonings Mix
- 1 tbsp. chili powder
- 1 tsp. ground cumin
- ½ tsp. sea salt
- ½ tsp. ground black pepper
- ¼ tsp. onion powder
- ¼ tsp. garlic powder
- ¼ tsp. dried oregano.
Preferred toppings
- Shredded cheese
- Black olives
- Avocado
- Sour cream
- Jalapeños
- Roma tomatoes
Instructions
- In a large saucepan, add chicken, seasonings, salsa verde, green chilies, and water.
- Bring to a boil and let simmer until most of the liquid has been soaked up.
- Place 3/4 cup cauliflower rice in a bowl and top with chicken.
- Add preferred toppings.
- Enjoy!!
